Cracker Crunch


Cracker crunch, saltine candy, personally my favorite name for this treat is Scooby Snacks, but no matter what name you choose, yummy is what you will say when you take that first bite and I can say with some confidence that it will soon become a family favorite. I just love that salty sweet combination, don’t you?! I was first introduced to this candy at bible study in high school and then again when I got married. It is very easy to make, a great potluck contribution and an unexpected surprise to a lot as it uses an ingredient that most (I find) wouldn’t expect in a candy….Saltine Crackers!

Just talking about it makes me want to go make it, well, that and my husband keeps asking for it, ha-ha! 


Cracker Crunch 
Adapted from Julie Hammond's recipe

Ingredients:
42 saltine crackers (a sleeve and half)
1 C. Packed Brown Sugar
1 C. Butter
2 C. Chocolate chips

Directions:
Preheat oven to 350 degrees. Cover a Jelly roll pan or rimmed cookie sheet with aluminum foil, grease with butter or cooking spray and lay out saltine crackers on pan so that none overlap but are next to each other. Heat Brown sugar and butter over med-high heat, mix together until combined. Bring to a boil and let it boil for 4 minutes, stirring constantly. Pour mixture over crackers and spread out with rubber spatula. Bake in oven for 3 to 5 minutes or until you see the caramel bubbling, remove from oven and sprinkle chocolate chips evenly over crackers. Return to oven for 1 minute, after removing spread chocolate evenly and gently across the crackers. Refrigerate until hard then break into pieces and Enjoy!!
