Almond Joy Granola

First of let me just say how often mason jars come in handy. i am very  happy to have a bunch in my house now. I didn't ever think of them as useful except for making jam, or canning; which i can't do in my current location. But these things have innumerable uses from crafting to storing goodies like this delicious granola.
It's been a while since originally trying this recipe and several alternates later. But when i want a good bowl of granola, this is the one i return to. I never knew i would love granola so much as I've never been a huge fan of store bought kinds, home made is a whole other story and easy to make! a great staple to keep around the house and fairly cheap to make.

Almond Joy Granola adapted from Sophistimom

Ingredients:
3 C. Oats
1/2 C. Sliced Almonds
1/2 C.Coconut (optional) *
1/2 C. Almond meal
1/2 C. Flax meal
1/2 C. Canola Oil
1 C. Honey
1/2 C. Brown Sugar
1 Tsp Vanilla Extract
1/2 Tsp Almond Extract

*Though the coconut flavor was not very strong, if you prefer you can leave it out and still have a very tasty granola.

Directiions:
Preheat oven to 300 degrees. Mix together all ingredients in a large bowl. Spread out onto parchment or silpat lined rimmed cookie sheet or jelly roll pan. Bake for 15 miinutes then stir with spatula. Increase oven temperature to 350 degrees and bake for 10-15 minutes more or until golden brown. Remove from oven and let cool completely on sheet. If you want more clusters clump the granola in the midddle of the sheet while still warm. After cooled break up into pieces and store in air tight container at room temp. It can last up to 2 weeks or more (not really sure when it goes stale, since it never makes it past 1 week in our house).

Enjoy in yogurt, with milk or by the handful!
